LEWIS & CLARK WHITE CHILI

2lbs boneless, skinless chicken breast (I use the whole 3lb bag)
1 tblsp olive oil
2 med. onion chopped (big chunks for Heather)
4 cloves galic minced
2 - 4oz cans chopped mild green chilis
1/4 tsp ground red pepper (cayenne)
1 tsp oregano
6 - 15oz cans great northern beans drained (or 3lb cooked great northern)
4 cup chicken stock
20 oz Montery jack cheese, grated, may also us pepperjack, ( I use 1/2 & 1/2
Cook chicken and dice. Heat oil over medium heat in the largest stock pot you've got. Add onions and cook till translucent. Add garlick, chilies, red pepper, and oregano and saute 2-3 min. add chicken, stock, beans, and cheese. Let simmer 15 min. (important) and serve
Let it cool and put in gallon bag and freeze.


Marie Calendar Cornbread
4 cup bisquick
4 tbsp. cornmeal
1 1/2 cup sugar
1 tsp. salt
1/2 tsp. baking soda
Mix and add 4 eggs. mix ingr. bake 350 for 1 hr. in a greased 9 x 13 in. pan.
