Mexican chicken bake

Mexican Chicken Bake

6 chicken breasts
Salt and pepper
Ground cumin
Favorite Mexican seasoning blend
2 cups corn
2 ½ cups black beans
2 ½ cups salsa
Spanish Rice

Place chicken breasts in baking dish and season as desired. Mix together the corn, salsa, beans and pour on top of seasoned chicken. Cover dish tightly with foil. Bake at 350 degrees for 45 minutes, or until done. Serve with Spanish rice. To stretch the recipe, shred the chicken, serve in tortillas, topped with sour cream…
