Pork Satay with dipping sauce

1 lb. boneless pork
3 T lemon juice
2 T peanut butter
2 T soy sauce
1 T brown sugar
2 cloves garlic, crushed
1/4 tsp crushed red pepper
Combine all above ingredients and place in freezer bag. Seal, label, and freeze.

Peanut dipping sauce
1/2 c coconut milk
3 T peanut butter
2 T lemon juice
2 T soy sauce
1/4 tsp crushed red pepper
Mix well. Freeze in baggie and attach to pork.

To serve: Thaw both bags. Thread meat onto skewers and grill or broil until done. Serve with warm peanut dipping sauce. Heat sauce in saucepan until boiling, reduce heat and simmer uncovered 5 min.
