2 Tablespoons vegetable oil
1/2 cup honey
1 can pineapple chunks and juice
2 lbs pork tenderloin
2 red peppers cut into large pieces
2 scallions, cut into large pieces
1 teaspoon grated fresh ginger
course salt and pepper to taste
Season pork generously with salt and pepper. Mix all other ingredients together.
Stovetop directions:
Brown pork. Add all other ingredients and boil until pork is cooked through. Serve over rice.
Kabob directions:
Thread pork, pineapple, pepper on skewers and grill. Boil and simmer rest of sauce for 10 minutes while cooking rice. Serve kabobs over rice with sauce drizzled on top. Optional: garnish with limes.
