Rouladen

This is my Mom's Rouladen Recipe. I'm sure she got it from my Oma. hmmmm home....

8 each beef - top round slices of beef approx. 7 ou each (have butcher cut very thin)
1/2 c mustard, dijon
8 slices bacon
4 pickles- dill. quarter
1 onion- finely chopped
2 1/2 tsp. marjoram
Butter
2 carrots
1 onion
6 tbps flour
1 Qt. beef broth
2 bay leaves

Spread each piece of beef with 1 tsp of mustard. Add to each piece 1 strip of bacon, 2 spears of pickle, and 1 tsp chopped onion. Sprinkle beef with marjoram, roll up and secure. In a dutch oven or 5 qt casserole melt butter over med. heat. Add beef rolls 3 at a time and saute until nicely browned, about 3 min. per side. Transfer to a plate.

Add carrots and halved onion to a pan, saute until lightly browned. Whisk in flour until lightly browned. Slowly whisk in broth. Add bay leaves. Heat to boiling, reduce heat, and add roulades. Cover and simmer 1 hour.

Remove, cool, and store with some gravy. Freeze.
Preheat oven to 350. Put roulades in an oven proof dish and add gravy over top ( you can strain out the fat), cover dish, and heat through 30 min.
