Carnitas

3 lb. pork roast
pork rub
1 large onion, sliced
1/2 jar pickled jalapenos, drained

Rub pork with desired seasonings. Wrap pork, onion and peppers in aluminum foil. Smoke in electric smoker until done.

From freezer: thaw and heat; serve with tortillas, monterey jack cheese and sour cream.
